Also known as Chiles Chipotles in Mexico, chipotle peppers come in a convenient can for long-term storage and are accompanied by a delicious red smoky adobo sauce.
Chipotle peppers in adobo sauce date back to a region that is now north of Mexico City, before the Aztec civilization. It is believed that the Aztecs smoked jalapeños because the thick, fleshy chiles were difficult to dry and prone to rotting.
The Aztecs used the same “smoke-drying” process for their chili peppers as they did for curing meat. This smoking allowed the chili peppers to be preserved for a substantial period of time. Today, delicious, plump jalapeños are selected for their flavor and then slowly smoked to infuse them with that heady, smoky chipotle flavor. Finally, the chipotles are preserved in a red adobo sauce.
Why not add a few of these chilies to your lasagna meat sauce to add a warm, spicy flavor? Chipotle chilies can also be added to cream cheese to make a delicious appetizer for a Mexican fiesta or party.
